Los alimentos que comemos contienen nutrientes que nos brindan energía y otras cosas que el cuerpo necesita. La mayoría de los nutrientes de los alimentos se pueden clasificar en tres grupos: proteínas, grasas y carbohidratos . Las dos formas principales de carbohidratos son los azúcares (como la fructosa, la glucosa y la lactosa) y los almidones, que se encuentran en alimentos del tipo de los vegetales amiláceos, los granos, el arroz, el pan y los cereales. El cuerpo descompone (o convierte) la mayor parte de los carbohidratos en el azúcar glucosa, que pasa al torrente sanguíneo. A medida que el nivel de glucosa del cuerpo aumenta, el páncreas libera una hormona denominada "insulina". La insulina es necesaria para llevar el azúcar de la sangre a las células, donde puede ser utilizada como fuente de energía.
